How do we know what ancient Greek philosophers said?

I am doing a school project and was just wondering how we know what ancient Greek and Roman philosophers such as Democritus and Aristotle said. Specifically their theories about atoms and the makeup of matter. Are there doents or some form of information we have from that time period, a link of proof would help too. Thanks!
